A lead about allergies, influences in !

And this is what I found his week. Somewhat hidden under a pile of written work, folders and backpack school stuff.
Mindful and thoughtful.

Her thoughts expressed, within a classroom context. Allergy-related feelings, overwhelming and yet she shared these at school in her english class.

A pungent taste arises in my mouth. My stomach clenches in a big knot. I feel my cheeks grow warm, like a sudden fever. My saliva thickens and I have trouble breathing. Every single nerve in my body tenses. Panic overtakes my body. I leave the room. Two full glasses of cold water and a couple of pills further, I lay down at the bed. When my nerves slowly relax, I, very carefully, breath out again. I realise that I have been holding in my breath. These actions usually surprise me once a month. My allergies have been an immense influence in my life becaus they 'control' my everyday life. I can never ea anything I want. I can never drink from someone else's bottle.

Surprises

There is no way out as it seems. allergies come, go and return, a journey that necessarily never stops, hopefully ever ends but always surprises. 'May be' I am not allergic to peanuts... But I am allergic now almost every day about all things I have never been allergic to before'. Not easy to understand these staments and even harder to respond to, the only wa I see is to give he all my empathy, love and a full understanding of he frustrations and anger, sme tmes. Ok the facts proove there is the peanut and there are all kind of nuts she' allergic to. Nothing changed. Last summer blood tests were clear as christal and the doctor was certain and determined in her attitude. 'Might be all very unsure that she will ever come over these deadly allergies'.
Few words, very open and honest her reaction. Better. No dreams.
And so I see what my daughter feels,
she has more general allergies and suddenly last week, I thought: she becomes like her cousin, allergic for nightshade vegetables.
A beautiful ratatouille is not any longer a colourful and tasteful recipe for her. Medications are an alternative to ignore and overcome ASAP any eventual reaction. The minute she tastes, the next moment she feels and experiments her body's disapproval.
As time goes by and she becomes older I feel that here is hardly a reasonable support all the moments that she simply can't eat the food she wood like to enjoy, so far so good where Rabat is the pure heaven for what about a wide selection of fruits an vegetables so we vary and alternate as much as possible. Keep up the colors , the vitamins , the variations like the tones and the moods, the dance of the teen she is now.

Thoughts and pink clouds

Because it is Wednesday.I like this day of the week, it's the day if the week that all stops just for a second. A moment of reflection about all other days, not a particular one. Time because I decide so to make space in my head.
The sky turns pink, soft baby cotton blanket, a new born baby girl, some where at a friend's house. Bubbles in my love's eye, Paris revisited.

I am still in Rabat, we stay for another open period of time, the girls are back in schools since the twentieth of August. We came back during Moroccan's Ramadan celebration, not easy after a long summer without any limitations. I need to emerge myself again into daily writing exercise. I like to change some lay out, input, texts, illustrate the blog in a way that suits more the author, the subject,the era, the state of my mind after time and long days of no boundaries.But instead of going after a temptation of graphics and fashion I should act modest and just listen to the master: write darling.

Food, fat and common sense, or the love for food!

There are just all the propositions that are well for you body, your brain, your hole self.
For me it's kind of a surprise every time when I read these articles, I think: do Americans really no so little about what's good and not healthy at all, there is a phrase about the too extended list of choices that this may be one of the reasons to grasp the unhealthier alternative, I don't know.
I keep all simple, kind of live the way I grew up, local, local and season choice....................
After years in the south of France and now in Rabat, Morocco, I only can say that I learned to enjoy even more the seasons, the colors, the rich basket filled with the fruit and veggies from the market, OK I admit we have fight with our temptations but then still I try a bakery, where I know that I eat at least healthier fats.

I you are a butter admirer, take a 100% butter not the nasty margarine, go for half salt butter.
Try to dip your bread instead in olive oil, sprinkle if you like with sugar (not the factory processed one).

I am sitting here at my too small kitchen table, my apron with apples gives this day a smile, we just had gnocchi, from the fresh Italian stand at the market this morning in Cassis, where it rained cats and dogs...
I made salad from with tomatoes, cucumber, onion, basel , pressed lemon and olive oil. (all chopped very fine and served in colored bowls). The gnocchi is so tasteful already that we had fresh cheese , basel pepper and olive oil.
The fruit laughs in all her colors, nectarines, apricots, grapes.

S feels better since some days.
the allergies and eczema come and go and I see a fluctuation when we change natural environments and yes she needs her treatments.

No skin prick testing.
The last week she simply took too much antihistamine so the tests wouldn't be of any help really.
The check up today.
my cosmopolitan colorful daughter stays deadly allergic for peanuts, so far is clear. the blood tests are the very clear proof, we kind of hoped things would HAVE CHANGED. No.
And then what , she has practical remain allergic for all groups of allergens she has been over the last 12 years.
No change , no prognoses, not by our doctor.
Hope, there is always hope.
But the scores are much to severe that we can have a solution in a short time from now.
We will be back in the hospital mid November and then do all skin testing.
Next week new blood research will be done here.

What can I say, I feel exhausted and proud, because she is my daughter, because sh's who she is, the way, her only personal vulnerable manner of dealing with these allergies, every day, the hole year round, summer even..................................... She is strong and a precious girl, she's giving it a thought this morning becoming a allergist herself, shifts now from the heart into her very deep own sufferings, any way she goes will be the perfect one for her.
I am so sorry she needs to work this out, on her own, it's a tremendous dark deep bummer, but she's healthy and bright alive, so let's pack the car and drive all the girls a little bit in land, the family house, the vineyards, the farmers, the river, the gorges, eating out side tonight under a eternal sky of stars.
And I should consider what she mentioned this morning about products available online, in a shop of our own, beautiful safe ingredients which you can have where ever you live.
Yes need to get entrepreneurial.........

The day

Sunrise over the Couronne de Charlemagne.
No breath of wind, absolute silence.
The crickets are still hiding and I drink my coffee while looking outside and I admire the colors.
My daughter joins me fro breakfast, she prepares herself, we are ready to leave to Marseilles.
See what the doctors will test, examine, tell, inform, hope they share new possibilities, wishful thinking and yet we might be right, may be this the moment things will change.

Marseilles

Avenue De Corse, Marseilles.
To many memories.
Two girls opened their eyes in this ancient city.
places to remember to revisit, you hardly ever do and then out of the blue I drive my car into this Avenue de Corse, coming back from the uphill located Cathedrale de Notre Dame de Marseilles.
The pediatrician who assisted at the births of our two last baby girls  lives at this Avenue.
Opposite to his cabinet is a small bakery, a place that came back to my mind while driving the girls for sight seeing with a German friend. my allergy girl can have a small brioche with sugar, what shocks me is the smell that surrounds me when I step into this tiny bakery shop. the large biscuits with sugars, the soft brioche with dried grapes, wonderful golden baguettes, the flan looks tasteful and the sandy cookies with chocolate or plain vanilla. I can not stand the memories I have here and share my story with the lady who serves us. Wonderful end of the day. may be it's more than coincidental. I mean we take S to the doctor tomorrow, all allergy history started in fact here, in the city of Marseilles, just a little further around following the Corniche, eastwards. Cassis.

The day before

Nectarines all summer round.
Round and flat pebbles at Bestouan beach this early morning.
The cold icy water, only 15 degrees celcius.
You feel your blood streaming .
Small old fisher barques going out heading the large blue.
Romantic villas hanging over the edges, rocks just push them back and keep them on the mainland.
Lonely swimmers, old village people, strong bodies, swimming the hole year round.
Teens and laughs, all summer long.
We prepare, tomorrow morning we need to wake up early to be in the La Timone Hospital, Marseilles. Extended research and diagnoses, full reports hopefully, better understanding about my allergy girl actual state of mind, body, allergies, life, medications, treatments and so on.

Summer continues

Thanks to summer I am alright!
This ever lasting season is just good and to marvelous to let go.
there is no rush no need to go fast not path for every day, just some small points we like to mark. Mostly connected to friends and family, that's what summer taste like, the flavors of friendships, those who took us into new adventures, wonderful explorations. Time and years, six years since the moment we left here. Coming back means a lot every time again, the same steps, the old roads, The Cap Canaille and how she turns more deep red at sunset. Routines. That makes that summer here is just perfect as it is and seeing people when we see them and  sharing a meal, an aperitif or a coffee and beautiful cake with orange flavors. Colors and summer.The blue and turquoise sea, the white at the tops of the waves breaking the speed upon the rocks where still the brute nature reigns.
Allergies make noise at the background.
My allergy girl performs like a pro but is tired of the sound that repeats itself to often.

Midnight diary

My allergy girl is preparing for the hospital research next week.
In the meantime I had my best friend from China here today, we strolled some along the port of Cassis, had some nice cheese on a platter and a pink rosé. 
She's my blue cake soul mate, the cake my allergy girl had for her first birthday and caused kind of the first visual allergic reaction.
We had fresh zucchini from the grand father of a friend of my youngest girl, a garden in St Raphael, Cote d'Azur.She came into my kitchen last evening and looked up to me and gave me the six zucchinis. 'They're pretty nice and the taste is so good, at least that's what my grand father told me'. 
I made a dish with these green sugar babies, basel, olive oil, garlic in one plate in the oven.
The last ten minutes under the grill.
Turkey with garlic and some fresh baguette.
Just another day in the Provence, it's hot, the doors are still open and some air comes in, all girls -except my allergy girl chats on FB - are in bed. I am off too.................

Summer sweets


And then it is summer and the girls are in the kitchen every day, almost.
Making all their favorites.
Cooking from French recipe books, just fresh bought in Marseilles.
Summer is the time to do what ever you like.
Because of the allergies, self baking is convenient. All can enjoy, taste and flavors are eternal. And chocolate is the heart breaker as it seems this summer.
They easily adapt the recipes and transform all in peanut and nut free baking.
They feel, my allergy girl does in the first place, that there is a missing book, the one about eating and fooding for the one suffering from peanuts and nuts.

I am back

Hi, I am back, since some time I was just not able to find my way back , into the blog, no particular reason, no not really, only some family business, some health issues, end of school year, the eventual kind of last Summer while living in Morocco, three teenagers, eager to take off, what we did. In  fact since 4 weeks we are in Europe and having a lazy, enjoyable time. Finding back our roots, kind of in the small streets of Cassis, seeing back friends and listening to local radio, no TV, no internet the last weeks................Only since today, right now in fact, that I am back via internet from my own place here in the Provence.

I am back on my blog and that feels good, I have a lot to tell, to you about all kind of conversations we had at the table or with friends, or my allergy with her friends and I sat with them, new era, new lines of life, that is the mark of this summer season, my girls are growing up as is my allergy daughter.

Hopefully the research in the Marseilles hospital will bring some clues, eye openers, and just positive energy to clear the sky, to set new trends.

She hopes for the golden medal: no more allergies! Which is a wonderful thought of hope, I like to  believe this too, but wishful thinking.

My husband came along today for the weekend, Rabat is for a moment far away, Cassis feels home again, summer home feelings, the heart travels back in august and home will be where we are then.

Sunday

Sunday in Rabat.
When temperature comes down, colors are more pronounced. The eye sees more and intense, that's how I feel it any way.
Along the small side roads there where the boys sell their small puppies they bargain today about yellow.
Corn in leaves, lemon as carpets on the earth, heavy branches under the weight of mimosa blossoming. The seasons of trees are endless or just almost eternal while the last blossoming has been a short while.
I see corn in my kitchen, smooth sweet to grill served with large sea salt and parsley butter. Lemon pie and thirsty girls like lemonade: water add with pressed lemon and a spoon of sugar.

Junk food revisited

What's in the name, junk food, an expression, a way of pointing out to some food industries who make most of the food we find from breakfast through lunch into dinner on our table.. (Food Inc Documentary)
Junk food has something to do with an addiction, I mean being a junk has it all in the name.
Or it is all about trash,
food we rather not taste,
probably without any flavor, prepared to be consumed as fast as junk food can be eaten, waiting in line for another plate.
For me it is easy, allergies made us on a distance from all these kind of dishes, prepared food is just not something we'll have in the fridge, on the table or during a long drive from Africa to Europe.
Junk food though has a certain attraction factor it is undoubtedly a pressure that makes that young people like this food, want to taste it, like to have it, ti obtain it at least some time now and then.
So many minds, so many tastes, the easy side of the fast food read junk food is you won't cook, you pick it up, you just drive in, you only need to dump the boxes at the end of the food intake. I mean dishes aren't really necessary so the minimal time investment is really interesting. Where time is an issue it seems to make sense, be honest, to pick up food. I mean the future dream house is totally equipped with it's own drive in.
So as we don't do the fast food nor the junk food we need to find out some alternatives, meaning small portions, finger food, boxes with snack varieties etcetera.

Tips:
small cakes in colored cups: cups cakes frostings  with coloring without any adds
chicken Bio, grilled with thyme and Estragon  in folio
macaroni salad with fresh herbs like basel, corn, red pepper, tuna fish or fried turkey served in small carton recycled containers
corn tortilla's home made filled with smoked salmon, chives, cream cheese; cut in small pieces wrapped in grape leaves. Find yourself some small baskets, or fancy decorated small plastic recycled bags. Museums have fashion boxes for meals, cool bags for snacks, go out and search for eye catchers.
No doubt that in all of this no traces of peanuts or nuts and no artificial adds. Try to buy fresh, if you have time, make more than you need and freeze. vary with any fresh herbs and that's the same for the veggies, radish or cucumber. Colors to make my day and it says something about the fruits you eat, red and blue is definite healthy. 


Tonight we had pasta. a nice butterfly pasta with 4 fresh green herbs, chopped  and mixed. Add to your warm pasta and pour olive oil! Fresh Parmesan cheese, I can find a nice one here in Rabat. The calcium is a plus of this particular hard and dry cheese.

Wow wonderful cherries, they are so cute when my youngest girls wears these red small glittering miracles as her most fanciest earrings, variety of cherries means variety of moments, variety of names, variety of regions, mother nature cherish these cherries with her ultimate patience.
I admired the two cherry trees we used to have in our garden in Lausanne, Switzerland, the trees with their old branches gave the garden a ancient , romantic character.
It's sad that my colorful allergy girl can't have these beauties, it's itches her throat so easier to avoid, we enjoy them and I love to make a cherry cake. In Rabat the cherries do arrive on large wooden chars, on every street corner and in the old town, The Medina you can find the purple ones for small prices. When the girls were young and we lived in France we went out together with dear friends to a farm of our cleaning lady and the children could climb in cherry trees and pick the red treasurer and fill their small baskets. It's wonderful how memories of cherries go all along back in time, cherries seem the perfect link between the present and the past, it's the classic appearance of this tiny fruit that seduces us every year again.

Fruits and veggies, limited amount of animal fat, breastfeeding for the first six months.....

All together I think we are doing fine. While taking care of allergies and eczema since baby time until teenage today, a basic diet valued by local products , seasonal linked vegetables and fruits, a modest intake of meat I have seen good results. Golden rules like no many adds, just 4 ingredients for a main plate and for a home made dessert as well makes life simple and very comfortable, if this mean that we can avoid a lot of health issues that's really terrific but not a guarantee for staying untouchable for cancer.

I feel these last days were much about life,
spirit, empathy, vulnerability.
Life is unpredictable, we wouldn't change that, and yet this makes us fragile.
We want a good end.
I like the playing with thoughts and the plate that composes a variety of flavors.
Slow motion.
An image that can stand for some time,
longer than just seconds,
a mood that appears.
Moments that slip away and could disappear without having a deeper meaning, timeless seems the opposite, the picture that turns us in the opposite direction.

Between thoughts there is a nice lunch, at the terrace,
all with our own thought, taste, perception and imagination.

Life is to be admired,
often we take it for granted.

Pound cake

Pound Cake or like the French say: quatre - quarts!

I love cake, the girls love it and most of the time it's simply the best. Pound cake. my father was pretty good in making us a Sunday cake, his father was the best, as I mentioned so often already. he was able to turn every moment into a celebration. he was delighted to be in the kitchen and looked after his grand children and I easily recall his attitude, a pure way of baking. Wooden spoons, simple tools, ancient balance and aper bags that did well instead of today's fat free paper.

We had pound cake with a frosting not on the outside of the cake but on the layers. my grand father cut the cake in nice slices, all seemed exactly the same size. (Today I all understand better. The exactly equal size seemed to be of an life threatened importance, but it was all connected to the scarcely food they had during the last winter in the second World war. )

On the slices he creamed a nice 'mocca' cream. The cream was made of butter and sugar and fresh made dark, dark coffee.

A recipe for pound cake:

5 eggs, separated
About 2/3 cup unsalted butter
About 2/3 cup sugar
About 1 1/4 cups flour
1 teaspoon grated lemon rind


Preheat the oven 325 F.
Grease a deep 8 inch cake pan.
If you like the pound cake.... then weigh the ingredients. Compare the eggs withe weigh of of butter and later on with the flour.
Melt the butter.
When starts melting take the pan of the heat
beat the egg yolks with the sugar and the lemon.
When mixture goes pale than add the the butter.
Gradually add the flour.
Beat your whites into snow. Peaks like the Alps!
Fold the snow into the mixture, all with gently movements.
Pour your mixture into the cake pan and into the oven!


Enjoy the pound cake warm with fresh fruits of the season, blueberries and all berries will do, or melon and watermelon, or make a nice butter coffee cream!

Because of a birthday and there's not the one who's having his birthday, but we will party later, that's what we said early this morning. While Rabat awakes and the day starts warm already with no breeze at all, but this is exactly what I like, it's the weather I live for, at least that's the time of year I admire the evenings, long and warm and the no border between in and out , inside and outside, doors seem transparent, when day ends and evening steps in slowly via the back yard I clean the kitchen after supper and we watch Julia Child, for the I don't know how many time we looked the movie together, the girls and I. 
The supper though I made in the afternoon, I thought of making the day longer and having the dish done and then all is so easy when the sun shines, the girls are happy and somebody is having his birthday.

I quickly fried the broccoli in olive oil and garlic. Cook 250 gr of three color pasta. Cut two small red pepper in small bits and sliced the garlic.
All ingredients nicely together as one fresh family of vitamins into a glass bowl and pored some olive oil, black pepper and sea salt. Bowl until supper in the fridge.
Served the salad with some mozzarella and smoked salmon,bread with grains.
I loved the colors, fresh and bright; the girls took more than one portion!

The art sculpture in The Petit Palais in Paris is on my mind, the huge red sculpture, you need to go into it and that you will discover the outside when you come out, the artist liked to make the set up in a upside down manner. The people who went into the sculpture felt themselves comfort, unless the immense surface, may be it's the color red, the warmth that reflects fro the plastic structure.

Butterfly

The weather as it seems to be is one of the real aspects that causes here in Rabat the feeling of her allergic fevers, in all aspects and varieties. As we welcome the Summer and time laps , longer in the evening , sitting outside and endless skies to high to catch the night, stripes at dawn , pink and glittering drops, the green of the trees colors deeper, leaves fall already because temperature rises and season change while we are not yet ready to say good buy to another year in Rabat.

Enjoying food in the warm evening air, we find our rhythm in dishes that bring back memories. Artichoke dipped in vinaigrette. made of olive oil, mustard and balsamic vinegar.
French baguette with the Moroccan touch and cheese: goat, emental and comté.
Watermelon deep red in beautiful slices and bright laughter in the blue evening.

The dramatic connection between dermatological issues and allergies. The envelope though seems to be sometimes a source of sorrows and heritage is certainly linked. Traveling

When those who are allergic like traveling, life is an easy adventure, at least mine is........meaning I am a traveler, saying I remember those who couldn't understand so well my eager to leave, to go, to discover, to change environment, to collect impressions, smell flavors, cross cultures and people from elsewhere. It's certainly something that appears as an atom and evolves in a stream of unrest. Restless legs, spiritual minds, chasing a sunset or the mother of pearl. New horizons.
Today we couldn't just simply not buy the melons at the side road driving home from Marrakesh. They stand in line  along the road, young Moroccans with their plastic trays packed with melons. Soon after and having taste the slices of the so fresh orange fruit we continued our way home, the car smelled like a fruit garden.

The cooking class, a private one. Just me and the one I asked to cook with me, to invite me kind of to her secret garden, her recipes, her ultimate way to feed her kids everyday and come with ideas again and again. That's in fact where things go wrong, were I loose my confidence in myself, while running out of ideas. Italian food is full of temptation and that's what we need to overcome the small moments of hesitation, to think about'not cooking at all today'. Allergy wise it's perfect. The parade of plates is eternal, it brings back memories from the eternal city and it recalls the summers in France when the Italian Pastor cooked for our hole family. Some discipline to gain back. New ideas about vegetables and to rediscover that cooking together is a tremendous pleasure even if you hardly know each other.

Because of traveling and parenting

'Each family is unique, even allergies are unique, and all families have the right to work on a situation properly. There is no one-size-fits-all solution. Many teens with food allergy may not be allowed to use the school bus, while some can travel on their own, even to a foreign country.'


This sentence is really something, knowing we traveled around some countries already with a basket of allergies. It's this aspect, the traveling that is the linking pin with the cosmopolitan and the colorful of my daughter, her sisters, us. There are no bouderies, no limits, the sky may be is the limit. With or without allergies one can discover the world, connect with new food, secret recipes and freedom.

Although dated in 2008, what does time mean for a flew of information, lots of tings we get to know, read in aticles, newspapers, hear from our personal coach aren't new. Just introduced as something innovative, sparkly, dizzling and based on common knowledge and former research. There where it's much about the relationship between children and parents, we learn that we know so much already but, often we just aren't ready to confront ourselves with the meaning and the tools we've have in our hands.

Some Spring thoughts

Running out of seasons, days, ideas, information, blog notes. 
Running away from allergies... No not really. Hardly ever not a sign from allergies. 
These last days things are pretty well under control, and that's good. 
Too many severe reactions during the last couple of months and those are exhausting. 
What is many then ? It's probably very personal to answer this question. My allergy daughter would certainly respond in a modest way, while she waves all sorrow away with lightness like the butterfly dances on the tunes of fresh breath of the wind. She could easily forget the reactions she had. Most recently during spring break in Amsterdam and short before in march after a school day in Rabat. Others will come up with answers and long descriptions of the specific situation and so and so reaction. Where some won't share an answer at all, blowing their experiences away because of feelings of  insecurity, anxiety,  misunderstanding, vulnerability.
IN her words, picked with caution my colorful girl is neither without doubt nor without proud. The action, the expression of attitude are connected with a range of feelings and colored by a mood, a moment. 

I know that sharing the fact of being allergic is not always easy. And much of the resistance is connected to the questions we pose ourselves. Often we are driven, challenged or stopped in our actions by the voices, the questions in our own head. The answers we receive to our own answers, the feelings we have about the environment, the doubt to act or not. being a minority makes that you feel overruled and in a learning environment where you spend most of your time it's a fight to get your personal message out. And is it necessary in the end? I don't know. I am surprised though that my daughter hardly speaks about the allergies she's facing. And yet it doesn't shocks me at the same time. It's fare more in the expectations of the things that we could hope that openness and straight forward speaking are elements truly implemented in today's teens life. The mirror though sends another image. There's in the schedule and the lack of time, spare slots in full booked agenda's not such a thing as 'what's bothering you' ' is this about your health'. And this hasn't change so much since long. Being different makes that you should come up with something hyper, hot, glossy, way to wow or what have you. Sites about teens and their allergies are mostly evolving under the wings of an adult site and with a truly a back up from professionals and teams of specialists. Out there, in the school yard, at the picnic table, during a school trip, entrance at high school, another Prom it is in most of these situations about one self and the guts to speak out for your self and to stay very steady on your both feet.

It's definitely as beautiful as the colors in the pencil box. But she will draw her lines in H and B.

Spring ... waves

Sunday's , I like Sunday's like today, an easy and warm day. laying down in the garden under a nice plaid, once brought from Portugal, getting rid of my back pains, while closing my eyes and just hearing the birds in the garden, girls running and screaming, spring is all around, I hear the kids from the shanty town, biking in the street, having fun. Mimosa blossoms in th end of the garden, a tiny tree but I suppose her flowers and yellow soft balls are so strong that they cause easily eczema and all sort of allergies. my allergy girls definitely runs along with small swollen facial spots. The children's hospital from Chicago asks for volunteers, allergy patients for a research.  I consider to send them a letter and see what the chances can be.
With 12 million Americans allergic...................
But I'll try anyway, it would be great to have my allergy daughter in a research done among allergy patients.
In the meantime the weekend passes.
Lots of dishes and different people, this is certainly one of the beautiful aspects of living in various countries. And there's not to much time to think to much about one's own troubles,
spring comes with energy and waves of impulses and adventures, longer days and late sunset.

I feel after all those years that you'll never finished with new collected data, information, insights. It's very comfortable to feel supported in your opinions and observations, it's pointing out that a serious diagnosis and powerful attention without any need to become hysterical is just the way to deal with allergies. When your child suffers, you like to have people out there who do understand and and respect, it's helpful in one's relation towards others, family, peers to transfer these articles and sites. Allergies are a very serious issue. And you can live wonderful well while being an allergy girl, but you need to respect some golden rules. So take that as a message, a personal one, we came from far, we lived in different spots and still she does fine my allergy girls. Not without mentioning that it asks an investment, patience and empathy.

It's disturbing though when I read the symptoms a body evolve while having an allergic reaction. The stomach ache and the vomiting, the respiration and nauseous problems. Disturbing because my allergy girl goes through these stages, as two weeks ago in Amsterdam. It seems that reactions got worse.

It's medical, but it's understandable even for non medical specialists, which means myself, I do feel being a specialist but with another formation, background and observation. personal experience and the practical experience in every day life. This make sense. We see, feel and live so often hay fever with our allergic daughter and even her sisters that one doubts and hesitates and lost clue in getting the right picture. Traveling from the South to the North and back, the seasons are quiet difficult to determine any longer and pollens do make us stay sniffing and coughing and unfit and the world takes place in a indoor setting. The Netherlands already is a spot to avoid for her as pollens seem to start to outcome when we land with the plane to visit some relatives. In early summer last year and during fresh spring this month, outside life in the city and the countryside becomes rather uncomfortable. When Michael Pollan mentions in his food rules that we should stick to local producers a comparable comment is used by scientists arguing that one should consider the import of exotic trees to European countries.

"In Germany, it is now only in November that we do not see allergenic pollen - so the season of suffering for people with hay fever is getting more serious," she said.

"On a local scale, planners should be more aware of what sort of problems may arise from the urban trees they're planting.

"Often they use birch trees, for example, because of their nice silver colour, not aware that they leave allergenic problems behind."

Ginger!!!

Tonight as dessert beautiful cake with ginger and apple.
A flavor that make you feel like being on a travel, a journey.
Ginger is a flavor that comes along with the thoughts I still have when thinking of my grandfather. He was the ultimate grandfather, the one who decorate the table with cakes and frostings. He made the 'butter-cookie'. Same tradition as a pound cake,
4 ingredients all in a nice balance and similar quantities:
flour, sugar, butter and eggs.

Butter Cake
250 gr butter
250 flour
250 sugar
4 eggs (I am not sure though and I need to look this up)

Because of the colonial past of the Netherlands there is ginger, so add some spoons of ginger and the tatse will be just awesome. Cut in small pieces because it's a traditional Dutch cake and very rich. Delicious when you have a cup of tea in the afternoon.

My cake tonight was:
180 gr butter
120 gr flour
60 gr corn flour
3 eggs
2 tbsp of ginger
1 apple, small pieces

The most important is to separate the whites from the yolks. beat them into snow.
Start with the butter, then add the sugar, yolks: one by one and finish with the flour mixed with the corn flour.The final add is the snow whites into the mixture, slowly.
Then apple and ginger.
bake in 35 minutes, 190° Celsius.

Serve with apple juice or a nice dessert wine.

Another Birthday Girl's favorite!

When: second birthday 1999, Les Janots, Cassis, Provence, France.

Name: Duivels voedsel (Devil's food)

The cake is magnificent and very rich. An American recipe. I must have been thinking about the Blue Coconut Cake (see blog recipe index) I made for her first birthday, she had her first food related allergic reactions.
No peanuts and nuts, some eggs and there's chocolate. My allergy knowledge at that time was based on intuition and talks with dermatologists and pediatrics.

Devil's Food
(baking pan 22 cm)

Step 1.
100 gr black chocolate
60 gr sugar
1/8 l milk
1 egg yolk

Heat the oven, 180 ° Celsius. melt chocolate. Batter sugar, milk, yolk. Mix slowly into chocolate. Cool down.

Step 2
3 whites
2 tbsp sugar

Batter the whites into snow!

Step 3
4 tbsp butter
3 tsp vanilla sugar
80 gr sugar
2 egg yolks, 3/4 dl milk
salt
200 gr flour
1,5 tsp baking powder

Mix butter with sugar en add yolks, milk and salt, flour and baking powder.Add the chocolate melange and later the egg whites. Fill your baking pan en bake this Devil's food in 40-45 minutes. take out and let cool down.

Step 4
Frosting
1/2 l whip cream
1,5 tsp vanilla sugar
1,5 tsp icing sugar
2 tbsp coco powder
2 tbsp chocolate flakes

Prepare the frosting from cream and sugars en add the coco.

Step 5 and Final touch
Cut the cake in two layers. Cream one with a thick layer. Put the second on top and cover the outside with the rest of the frosting. Decorate with chocolate flakes. (Take a good brand with a high % of coco)

A favorite of the Birthday girl


My daughter's birthday is today. Although not present, because of traveling, they fly out those teens! I will celebrate on the blog with some of her favorites, the list will be so long that I will never be ready before midnight but I'll share some. There were her special ones in all 5 countries where she lived so far. And with some Greek, African and Turkisch blood in the family the variety became only more exquisite. All recipes of-course are in respect of her allergies. We never felt, the last 14 years limited in making a choice for a nice meal. We never missed an occasion to make, bake and invite new adventures. I think one of the reasons my colorful daughter spends so much time in the kitchen, is because she turned out to be allergic. And overall she is a food lover! I do remember all the birthday cakes, just give me the time to share those on the blog. There will be some in Dutch, some in French and recipes in English, for the food lover among you, there will be no problem to understand. I mean the fun is the cooking, the link is the ultimate love for flavors and the sitting together, sharing a plate, a dish, a meal. Happy Birthday, bon appétit!

Today 35 degrees Celsius, pool, fresh food.


Spinach / Parmesan Pie. 

What you need for the crust:
250 gr flour
125 gr butter
salt
cold ice water

Prepare the dough with your kitchen robot.
You can cook the crust filled with rice for 15 minutes or cook it directly filled with your spinach.

Pie filling
500 gr spinach
50 gr Parmesan
garlic, pepper and salt (if you like)
1 onion
fresh sour cream, 2 large spoons
1 egg + 1 egg yolk
oil 2 tbsp

Heat oil, glaze onion and add garlic, 2 minutes.
Add spinach, 10 minutes low temperature.
Take away from stove and let cool down.
Add cream, egg and Parmesan.
Preheat the oven, 210° Celsius.

Roll the dough and cover bottom and borders fill with your preparation.
You can use the yolk for the borders so they will shine blond and gold when baked!
(35 minutes, depends on your oven)

You could make small envelopes filled with spinach, nice aperitif!
Try instead of Parmesan the Greek feta.

Motherhood, The motherhood is the name of this particular site. For me as an European this is all very overwhelming. Is it because of the fact that there are 300 Millions of Americans that speak the same American language that these kind of platforms have a support, a need , a real possibility to get an audience.. I don't know the answer, but to me, as a European mother of a very severe allergic daughter this is all so unfamiliar. I believe it's terrific that these networks exist and support patients and families in their way to get along with their anxiety. These networks certainly don't have a place in Europe today and I am very eager to see how these kind of interactive networks could find a spot, some day.

Joking about allergies can end up in pretty dramatic situations. Better not.
Those who suffer from food allergies or respiratory allergies are both risk groups. So better not fooling around with their allergies.
The story from this student is rather sad, his story is much about feeling excluded and not able to have dinner with friends because of the variety of allergies he's facing. I think there are limitations and that's so frustrating but better turn the page into the possibilities you have and all things you can eat instead of the focus of what not. It's how I try to educate our daughter and her environment. Otherwise life becomes a bummer every day. I see the pain and the feeling of being different and like my allergy daughter can scream out: 'I am never able to eat anything'. OK that's fine, sometimes, you need to feel just terrible but the focus should be on what you can have. Especially in the States there are these days so many books about all kind of adapted dishes and sites with restaurants where one can easily go and have an excellent moment without a worry. Without a positive mind the allergies will take over and that's not what one should let happen. My head turns always, like today with my allergy daughter travelling to Barcelona with her school. Will she be safe....will there be some nice food she can eat.... The great thing is she travels, she goes, water and fruits will do for some days, plain , basic ingredients and common sense.

I am confused, I was told by a mother in Amsterdam over the weekend when she asked me about my projects. We talked about severe allergies, living around the world and attending different school systems and doing fine like my allergy daughter.

Toen de 7e Montessorischool Madelief (4) weigerde vanwege haarpinda-allergie, begon voor haar ouders de zoektocht naar een andere school.

Madelief (4) was al op kennismakingsgesprek geweest bij de juf van het 7e Montessori in het Rembrandtpark. Nee, de pinda-allergie leek geen probleem te zijn, reconstrueert vader Olivier ter Brake het genoeglijke gesprek. “Tot onze grote verbazing kregen wij kort daarna, twee weken voor Madeliefs eerste schooldag, het bericht van de Montessori dat zij haar toch niet konden plaatsen.” Reden: haarpinda-allergie. Madelief was beter op haar plaats op een schoolvoor chronisch zieke kinderen.
Ter Brake: “Speciaal onderwijs! Waarom? Normale kinderen met eenpinda-allergie tussen kinderen met zware epilepsie, kanker en terminale ziektes zie ik niet zitten. Ze is een gezond kind. Het enige wat zij nodig heeft, is een omgeving die pindavrij is, én goed toezicht.”
Toch is een pinda-allergie minder onschuldig dan het klinkt. Sterker: die kan levensbedreigend zijn. Als een ander kind pindakaas heeft gegeten en een kus geeft, kan het al mis zijn. Bij een anafylactischepindareactie kan de keel opzwellen met een moeizame ademhaling of zeer ernstige benauwdheid tot gevolg. Dan moet de patiënt met een zogeheten Epipen adrenaline worden ingespoten om de reactie af te remmen en met de ambulance naar een ziekenhuis worden vervoerd.
Ter Brake: “Madelief heeft op school helemaal geen medische begeleiding nodig, maar in het uiterste geval moet eerste hulp worden geboden. Als je als school geen eerste hulp wilt verlenen, wat voorschool ben je dan?”
Veel scholen willen dat risico toch niet lopen en weigeren op voorhandkinderen met een pinda-allergie, weten ze bij de Stichting Voedselallergie. Carla Groeneveld van de stichting noemt het regelrechte discriminatie. “Kinderen met een pinda-allergie zijn prima in staat naar de school om de hoek te gaan. Sterker, scholen mogen kinderen helemaal niet weigeren op grond van een allergie.”
Zij denkt dat de scholen bang zijn om in te grijpen als het toch misgaat. “Terwijl het niets voorstelt. Het is gewoon een kwestie van jezelf goed informeren wat je moet doen bij een noodgeval. En daar zijn protocollen voor.” Verder, zegt Groeneveld, moeten scholen een beetje ‘rekening houden’. Geen pindakaas op tafel tijdens de pauze, geen pinda’s tijdens feestjes en controles op traktaties.
Volgens de 7e Montessori is het onmogelijk de school pindavrij te maken en daarom, zegt directeur Jan Boekhout, is de afwijzing juist in het belang van het kind.
Over de timing van deze mededeling, twee weken voor de eerste schooldag, zegt hij: “De moeder van Madelief vertelde pas ná de inschrijving dat deze aandoening dermate serieus is dat de kinderartshaar een pindavrije school had aangeraden.”
Kon de school een pindavrije school garanderen? Het antwoord is, om diverse redenen, nee. Boekhout somt op. De school met meer dan vijfhonderd leerlingen en veertig personeelsleden ontvangt dagelijks nieuwe leerlingen, ouders, stagiair(e)s en gasten. “Die kunnen wij onmogelijk vooraf informeren over de situatie.” In de hele school ligt vaste vloerbedekking. Die wordt elke middag grondig gestofzuigd, zegt Boekhout, maar resten van voedingsmiddelen kunnen tussentijds niet worden verwijderd. Dan het overblijven. De school kan niet garanderen dat geen etensresten met pinda’s achterblijven. Tot slot worden jaarlijks honderden traktaties en maaltijden uitgedeeld waarpindaresten in kunnen zitten. Kortom: geen doen.
Na de afwijzing door Montessori besloot ter Brake ‘geen tijd meer te verspillen aan het halen van het gelijk’, maar naar een andere schoolvoor Madelief te zoeken. Nogal ingewikkeld, twee weken voor de eerste schooldag. Nadat ze vijftien scholen hadden benaderd, was het toch raak. Het is een school waar ze volgens ter Brake hun stinkende best doen om Madelief een veilige omgeving te bieden, maar het is ook een zwarte school, die, vrezen haar ouders, haar een taalachterstand kan opleveren.
Madeliefs ouders zoeken dus verder. Ze hebben 41 scholen buiten het eigen postcodegebied gebeld. Die waren vol, hanteerden strikt het aannamebeleid op postcodegebied of weigerden Madelief vanwege haar pinda-allergie. “39 keer was het antwoord nee, één keer ja en één keer bijna ja,” constateert ter Brake teleurgesteld. “Ik ben geen statisticus, maar ik denk dat per jaar meer kinderen na een ongelukkige val op school overlijden dan na een dodelijke allergischereactie.”

OK this is all very over the top.
(I hope that in Europe this is not possible. I will certainly check, especially after I spoke with a mother in Amsterdam over the weekend about children who need to go to special school institutions now in the Netherlands.))
The media attention this particular school goes after, is in my opinion beyond any reason. It's good to listen to the Specialist in the attached CNN Video, who keeps the picture about allergies simple and very reasonable.
Respect some rules for your child and your family, talk with your medicine so the child, teen, student will participate like all others in school and college life. To keep them safe!
My rule has been since ever: Don't taste anything; don't let allergic children taste food.
Stick to your diet, eat and enjoy all the things you can have!

Empathy, Understanding and Objectivity Need to Prevail for Students With Food Allergies!

Terrific! This is exactly what I see as the linking pin in the story about my daughter. I have been mentioning this more than once, an allergy as such a thing is not the problem: it becomes an issue and even very complex when a child, a teen, a student can't count on the empathy from his extended family and friends and even larger circles. Their allergies are serious and sometimes even life threaten. Food allergies do play a major part in daily life. Do interfere in social gatherings, family dinners, school parties, high school trips. Socializing means most of the time food, sharing time while eating a nice dish. It's the ultimate joy to prepare food and learn from each other by tasting the flavors from other countries, different cultures, it makes us cross cultures even.

Some professionals speak up about allergies and how to educate our children and teens.
It's true that the better were informed, the safer we feel, the easier it is to stand up and talk freely about the allergies who play an important role in your life. When you feel safe about your environment, because you're well informed you're able to inform your extended family and friends.
Life will be more fun when socializing isn't limited by unsafe food.

Mind your choice

A day is a cumulation of moments and often linked with food.
When I recall last Saturday in Amsterdam it was a typical wonderful Dutch Spring day.  At least it was exactly how I remember Spring in my country. The air becomes quiet warm after some hours and around noon the terraces are pretty crowded with those who enjoy the first sun rays. With my Moroccan perception of weather it feels quiet fresh but the fun of taking off your coat in early April makes me excited enough to follow with the ritual around me.

The place we spend some time is the location where my sister celebrated her marriage two years ago. An classic Amsterdam monument and a style icon of Amsterdam architecture tradition. The facade is dramatic with the middle and the two side wings, small windows all shining and reflecting in the bright Saturday morning sun.

The garden spreads out around the building and enters in a kind of a private Green park. It's designed as a maze. Lovely blossoming trees and a green wave goes with and follows the line of the trees. White cobbles decorate the path into the gardens around and tables and chairs welcome the guests for a nice lunch or coffee with apple pie.

My allergy daughter is enjoying Amsterdam, here in the city she opened her eyes almost 14 years ago.

When menu cards get opened, it seems there is a nice selection of salads and sandwiches, all with fresh and only a few ingredients. She choices the Italian foccacio bread with mozzarella, basel and olive oil. When lunch is served to her, she can't have it because of the not mentioned but added layer of pesto.............grrrrrrrrrrrrrr!

As I ordered the same, I inspected the sandwich and ran up to her at the next terrace table to inform her about the green and surely delicious cream but so allergy suspected because of the pine tree pits. We asked for another sandwich, same composition without the pesto, which was possible to get served in a minute.

The apple pie that came with the coffee was terrific but covered with a tremendous hill of almonds, that although allergies for this tropical white nut are minor to my allergy girl we skipped it from her dessert list. When we entered later in the evening a small restaurant at a walking distance of my sister's house located in the old dock area. She hoped for a nice flavor of ice cream, like the cherry on the day. Unfortunately for her was the one spoon and only tool for all cream flavors!

If I could start somewhere now, I would certainly look into a nice small café - bras with tons of separated spoons to serve each and any flavor, no nuts or peanuts at all... just a good place to be without a sorrow for those like my allergy daughter and all those who like the joy of food without tree and ground nuts. My dream. Blue in all her senses and colors.

Color concepts

NO issues of any allergy importancy since last Sunday.
But it was enough. The message was clear, the way the human body reacts at an allergy attempt is impressive, absolutely strong, not foreseen and therefor probably even more rigid. I mean I know these situations since so long, my allergy girl has this  self dependant attitude and then again we feel so overwhelmed.

What exactly do these reactions with your feeling about safety?
How often can you react with common sense to these kind of reactions and how long does it take you to come back at your feet?
Does one suffers the rest of the day, does it take 24 hours to come over a reaction?
What does help in these particular unsafety moments?
Is there a procedure to follow?
How do parents act in these circumstances?

All kind of questions do bother me, I would be pleased to communicate these gaps in my experience, knowledge & motherhood with others.

It's the cercle of no return and the same steps every next time it happens, it's the áha moment and the what is this, what's happening, this is a struggle. Same conversations, interactions, repetitive actions and questions and answers as we whispered them before. But it's to me also much about what about the next time, as it seems that reactions can get and evolve  more seriously and with a certain level of fear.

Could the solution be: I don't eat anything anymore....no that's a farce, it's a dream but the clue is that this could be the ever best thing to accomplish, in a film may be. The perfect script is yet not invented neither does my allergy girl know how we could establish things in a better way for her, neither myself. In this turning around in cercles there are so many temptations and impulses in the environment, how to avoid those, where to hide....so the setting of the movie would be quiet interesting. I could color the calendar, the time shots and the stills, the girls and the diary, the way to go with allergies and the insecurity about food, lack of safety.

Today:
Strolling in Amsterdam, some sun and rain, tramway, hot chocolate,
Dutch delight and family love. Cousins and bonding, outfits and color concepts.
